Everyone likes to be interviewed. It makes them feel important. And it's a great way to build rapport.

Build a list of people who can provide valuable input to a written interview (bonus points if they've already done a written interview or podcast interview in the past!) and then send them a simple email asking if they'd be willing to share with you.
